
Italian Sea Bass with Tomato and Caper Sauce

Ingredients:
- 4 pieces Sea bass fillets
- 2 tablespoons Olive oil
- 2 pieces Garlic cloves
- 1 cup Cherry tomatoes
- 1/2 cup Dry white wine
- 2 tablespoons Capers
- 1/4 cup Fresh basil leaves
- to taste Salt and black pepper
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the garlic and saute until fragrant.
- Add the sea bass fillets, skin side down, to the skillet. Cook for 4 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove the fish from the skillet and set it aside.
- In the same skillet, add the cherry tomatoes and saute until they begin to break down. Add the white wine and capers, and simmer for 10 minutes, or until the sauce has thickened.
- Return the fish to the skillet, and spoon the sauce over top. Simmer for 2 more minutes, ensuring the fish is well coated with the sauce.
- Season with salt and black pepper to taste, and garnish with fresh basil before serving.
