
Italian Rice Balls

Ingredients:
- 2 cups Rice
- 1 cup Mozzarella cheese
- 2 Egg
- 1.5 cups Breadcrumbs
- 0.5 cup Parmesan cheese
- 1 tsp Salt
- 0.5 tsp Pepper
- enough for frying Vegetable oil
Instructions:
- Cook the rice according to the package instructions, then let it cool.
- In a large bowl, combine the cooked rice, parmesan cheese, and beaten eggs. Season with salt and pepper.
- Form the rice mixture into small balls, then insert a cube of mozzarella into the center of each ball. Reshape the ball to cover the cheese.
- Roll the balls in the breadcrumbs until they are fully coated.
- Heat the vegetable oil in a deep frying pan over medium heat.
- Fry the rice balls in the hot oil until they are golden brown on all sides. This should take about 4-5 minutes.
- Drain the rice balls on paper towels and serve warm.
