Italian Rice Balls

Ingredients:

  • 2 cups Rice
  • 1 cup Mozzarella cheese
  • 2 Egg
  • 1.5 cups Breadcrumbs
  • 0.5 cup Parmesan cheese
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • enough for frying Vegetable oil

Instructions:

  1. Cook the rice according to the package instructions, then let it cool.
  2. In a large bowl, combine the cooked rice, parmesan cheese, and beaten eggs. Season with salt and pepper.
  3. Form the rice mixture into small balls, then insert a cube of mozzarella into the center of each ball. Reshape the ball to cover the cheese.
  4. Roll the balls in the breadcrumbs until they are fully coated.
  5. Heat the vegetable oil in a deep frying pan over medium heat.
  6. Fry the rice balls in the hot oil until they are golden brown on all sides. This should take about 4-5 minutes.
  7. Drain the rice balls on paper towels and serve warm.
