Italian Porchetta

Ingredients:

  • 4 lb Pork Roast
  • 5 cloves Garlic Cloves
  • 4 sprigs Fresh Rosemary
  • 2 sprigs Fresh Sage
  • 2 tsp Sea Salt
  • 2 tsp Black Pepper
  • 1 tsp Red Pepper Flakes
  • 3 tbsp Olive Oil
  • 1 cup White Wine

Instructions:

  1. Preheat your oven to 275 degrees F (135 degrees C).
  2. Rinse the pork roast and pat dry with paper towels.
  3. Combine garlic, rosemary, sage, salt, black pepper, and red pepper flakes in a food processor until roughly chopped. Add olive oil and process into a paste.
  4. Rub the paste all over the pork roast, then tie with kitchen twine to hold it together.
  5. Place the tied pork roast in a roasting pan. Pour white wine into the pan.
  6. Roast in the preheated oven, basting occasionally with the wine and rendered fat in the pan, until the pork is tender and the skin is crispy, about 3 hours.
  7. Let it rest for 10-15 minutes before slicing to serve.
