Italian Porchetta

Ingredients:
- 4 lb Pork Roast
- 5 cloves Garlic Cloves
- 4 sprigs Fresh Rosemary
- 2 sprigs Fresh Sage
- 2 tsp Sea Salt
- 2 tsp Black Pepper
- 1 tsp Red Pepper Flakes
- 3 tbsp Olive Oil
- 1 cup White Wine
Instructions:
- Preheat your oven to 275 degrees F (135 degrees C).
- Rinse the pork roast and pat dry with paper towels.
- Combine garlic, rosemary, sage, salt, black pepper, and red pepper flakes in a food processor until roughly chopped. Add olive oil and process into a paste.
- Rub the paste all over the pork roast, then tie with kitchen twine to hold it together.
- Place the tied pork roast in a roasting pan. Pour white wine into the pan.
- Roast in the preheated oven, basting occasionally with the wine and rendered fat in the pan, until the pork is tender and the skin is crispy, about 3 hours.
- Let it rest for 10-15 minutes before slicing to serve.
