Italian Lemon Chicken

Ingredients:

  • 4 Chicken Breasts
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup All-purpose Flour
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic
  • 1 cup Chicken Broth
  • 1/4 cup Freshly squeezed Lemon Juice
  • 2 tablespoons Unsalted Butter
  • 2 tablespoons Fresh Parsley

Instructions:

  1. Season chicken with salt and pepper. Dredge each breast in the flour and shake off excess.
  2. In a pan, heat the olive oil over medium high heat. Add the chicken and cook until brown, about 5 minutes each side. Remove the chicken from pan and set aside.
  3. In the same pan, add the garlic and cook until fragrant. Then, add the chicken broth, lemon juice, and bring to boil. Reduce heat and simmer for 5 minutes.
  4. Return the chicken to the pan and simmer in the sauce for 5 minutes. Check if the chicken is cooked through.
  5. Add butter to the pan and stir it into the sauce until it's melted.
  6. Serve the chicken with sauce and garnish with fresh parsley.
