Italian Herb Roasted Chicken

Ingredients:
- 1 number Whole Chicken
- 2 tablespoons Olive Oil
- 1 bunch Fresh Rosemary
- 1 bunch Fresh Thyme
- 3 cloves Garlic
- 1 number Lemon
- to taste Salt
- to taste Black Pepper
Instructions:
- Preheat your oven to 375°F (190°C).
- Clean the chicken and pat it dry using paper towels.
- In a bowl, combine olive oil, minced garlic, lemon juice, finely chopped rosemary and thyme. Mix well until it forms a paste.
- Rub this herb-oil mixture all over the chicken, both outside and under the skin, making sure it's fully coated. Season with salt and pepper as desired.
- Place the chicken in a roasting pan and cook for around 60 minutes, or until the internal temperature reaches 165°F (74°C).
- Let it rest for a few minutes before serving. This allows the juices to redistribute throughout the chicken.
- Serve the herb roasted chicken with your favorite sides, e.g., roasted vegetables or a fresh salad.
