Italian Herb Roasted Chicken

Ingredients:

  • 1 number Whole Chicken
  • 2 tablespoons Olive Oil
  • 1 bunch Fresh Rosemary
  • 1 bunch Fresh Thyme
  • 3 cloves Garlic
  • 1 number Lemon
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Clean the chicken and pat it dry using paper towels.
  3. In a bowl, combine olive oil, minced garlic, lemon juice, finely chopped rosemary and thyme. Mix well until it forms a paste.
  4. Rub this herb-oil mixture all over the chicken, both outside and under the skin, making sure it's fully coated. Season with salt and pepper as desired.
  5. Place the chicken in a roasting pan and cook for around 60 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let it rest for a few minutes before serving. This allows the juices to redistribute throughout the chicken.
  7. Serve the herb roasted chicken with your favorite sides, e.g., roasted vegetables or a fresh salad.
