
Italian Healthy Pasta Salad

Ingredients:
- 200 grams Whole grain pasta
- 2 tablespoons Olive oil
- 2 tablespoons Balsamic vinegar
- 1 cup Baby tomatoes
- 1 medium Cucumber
- 1/2 medium Red onion
- 1/2 cup Black olives
- 1/2 cup Mozzarella
- 1 handful Basil leaves
- to taste Salt and pepper
Instructions:
- Cook pasta according to package instructions. When done, drain and let it cool.
- While pasta is cooking, chop cucumber, tomatoes, and red onion into bite-sized pieces.
- In a large bowl, combine the cooled pasta, chopped vegetables, olives, and mozzarella cubes.
- Drizzle with olive oil and balsamic vinegar. Toss until well combined.
- Season with salt, pepper, and toss in the fresh basil.
- Serve immediately or refrigerate before serving for better taste.
