Italian Healthy Pasta Salad

Ingredients:

  • 200 grams Whole grain pasta
  • 2 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 cup Baby tomatoes
  • 1 medium Cucumber
  • 1/2 medium Red onion
  • 1/2 cup Black olives
  • 1/2 cup Mozzarella
  • 1 handful Basil leaves
  • to taste Salt and pepper

Instructions:

  1. Cook pasta according to package instructions. When done, drain and let it cool.
  2. While pasta is cooking, chop cucumber, tomatoes, and red onion into bite-sized pieces.
  3. In a large bowl, combine the cooled pasta, chopped vegetables, olives, and mozzarella cubes.
  4. Drizzle with olive oil and balsamic vinegar. Toss until well combined.
  5. Season with salt, pepper, and toss in the fresh basil.
  6. Serve immediately or refrigerate before serving for better taste.
