Italian Healthy Baked Eggs with Vegetables

Ingredients:

  • 8 unit Eggs
  • 1.5 cups Mixed Vegetables, finely chopped (e.g., bell peppers, zucchini, tomatoes)
  • 1 tablespoon Olive Oil
  • 2 unit Garlic Clove
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Fresh Basil Leaves, finely chopped
  • to taste unit Salt
  • to taste unit Black Pepper

Instructions:

  1. Preheat oven to 180C/350F and get out a large oven-proof skillet.
  2. Heat the olive oil in the skillet over medium heat. Add the garlic and sauté until fragrant.
  3. Add the mixed vegetables to the skillet and cook until they're softened. Season with salt and pepper.
  4. Create pockets in the vegetables and crack an egg into each pocket. Do this carefully to avoid breaking the yolks.
  5. Sprinkle the cheese evenly over the top of the eggs and vegetables.
  6. Move the skillet to the preheated oven and bake for 10-15 minutes, or until the eggs are cooked to your liking.
  7. Remove from the oven and sprinkle the chopped basil on top before serving. Enjoy your healthy and delicious Italian dinner!
