Italian Fruit Bruschetta

Ingredients:

  • 1 whole Baguette
  • 3 tablespoons Olive oil
  • 2 cups Fruits (strawberries, peaches, cherries)
  • to taste Honey
  • 1 cup Mascarpone cheese
  • 1 handful Fresh mint leaves

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C). Cut the baguette into 1/2 inch slices and arrange on a baking sheet.
  2. Drizzle the slices with olive oil. Bake in the preheated oven until toasted, about 5 minutes.
  3. Meanwhile, cut the fruits into small pieces and mix with honey.
  4. Spread a layer of mascarpone cheese on each toasted slice. Top with the fruit mixture.
  5. Garnish with fresh mint leaves before serving.
