Italian Egg Frittata Snack

Ingredients:

  • 6 units Eggs
  • 1/2 cup Chopped bell pepper
  • 1/2 cup Chopped onion
  • 1/2 cup Grated Parmesan cheese
  • 2 tablespoons Olive oil
  • 1 tablespoon Italian seasonings
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. In a medium bowl, beat the eggs with the Italian seasonings, salt, and pepper.
  2. In a non-stick skillet over medium heat, heat the olive oil. Add onions and bell peppers, and sauté until they are soft.
  3. Pour the egg mixture over the vegetables in the skillet. Cook until the edges start to pull away from the pan.
  4. Sprinkle the Parmesan cheese over the top of the egg mixture.
  5. Place the skillet in a preheated oven (350°F or 175°C) and bake until the eggs are set, for about 10 minutes.
  6. Remove from the oven and let it cool for few minutes.
  7. Cut into wedges and serve warm or at room temperature.
