Italian Egg Frittata

Ingredients:

  • 8 unit Eggs
  • 2 tablespoons Olive oil
  • 1 small Onion
  • 2 unit Garlic cloves
  • 1 unit Red pepper
  • 1 medium Zucchini
  • To taste Salt
  • To taste Black pepper
  • 10 unit Fresh basil leaves
  • 0.5 cup Parmesan cheese

Instructions:

  1. Preheat the oven to 350 degrees.
  2. In a bowl, beat the eggs and set aside.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and garlic and cook until soft and fragrant.
  4. Add the red pepper and zucchini to the skillet and cook until soft.
  5. Pour the beaten eggs over the vegetables in the skillet. Season with salt and pepper. Cook without stirring until the edges start to pull away from the skillet.
  6. Sprinkle the fresh basil and Parmesan cheese on top of the egg mixture.
  7. Place the skillet in the oven and bake for 15-20 minutes or until the frittata is set and the cheese is golden brown.
  8. Let the frittata cool for a few minutes before slicing and serving.
