
Italian Egg Frittata

Ingredients:
- 8 unit Eggs
- 2 tablespoons Olive oil
- 1 small Onion
- 2 unit Garlic cloves
- 1 unit Red pepper
- 1 medium Zucchini
- To taste Salt
- To taste Black pepper
- 10 unit Fresh basil leaves
- 0.5 cup Parmesan cheese
Instructions:
- Preheat the oven to 350 degrees.
- In a bowl, beat the eggs and set aside.
- Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and garlic and cook until soft and fragrant.
- Add the red pepper and zucchini to the skillet and cook until soft.
- Pour the beaten eggs over the vegetables in the skillet. Season with salt and pepper. Cook without stirring until the edges start to pull away from the skillet.
- Sprinkle the fresh basil and Parmesan cheese on top of the egg mixture.
- Place the skillet in the oven and bake for 15-20 minutes or until the frittata is set and the cheese is golden brown.
- Let the frittata cool for a few minutes before slicing and serving.
