Italian Comfort Food: Frittata alla Carbonara

Ingredients:

  • 6 unit Eggs
  • 1/2 pound Spaghetti
  • 1 cup Parmesan cheese
  • 1/2 pound Pancetta or guanciale
  • 2 cloves Garlic
  • 1/2 teaspoon Black pepper
  • to taste Salt
  • 1 tablespoon Olive oil

Instructions:

  1. Boil water in a pan over high heat. Once boiling, salt the water. Add the spaghetti and cook until it is just shy of al dente.
  2. While the spaghetti is boiling, heat a large ovenproof skillet over medium heat. Add the olive oil and guanciale or pancetta. Cook until it is browned and crispy.
  3. Add the garlic to the skillet pan and cook until it is lightly browned. Once the garlic is cooked, remove it from the skillet.
  4. Beat the eggs in a large bowl. Add the cooked spaghetti to the bowl, and toss until combined. Stir in the guanciale or pancetta, Parmesan cheese, garlic, salt and black pepper.
  5. Pour the misture back into the skillet and cook over medium heat. Let the bottom set for a few minutes, then put the skillet into a preheated oven (350F) and bake until the top of the frittata is set and slightly browned, about 10 minutes.
  6. Remove from the oven, let it cool for a few minutes before cutting into pieces and serving. You may garnish it with additional Parmesan cheese if desired.
