
Italian Comfort Food: Frittata alla Carbonara

Ingredients:
- 6 unit Eggs
- 1/2 pound Spaghetti
- 1 cup Parmesan cheese
- 1/2 pound Pancetta or guanciale
- 2 cloves Garlic
- 1/2 teaspoon Black pepper
- to taste Salt
- 1 tablespoon Olive oil
Instructions:
- Boil water in a pan over high heat. Once boiling, salt the water. Add the spaghetti and cook until it is just shy of al dente.
- While the spaghetti is boiling, heat a large ovenproof skillet over medium heat. Add the olive oil and guanciale or pancetta. Cook until it is browned and crispy.
- Add the garlic to the skillet pan and cook until it is lightly browned. Once the garlic is cooked, remove it from the skillet.
- Beat the eggs in a large bowl. Add the cooked spaghetti to the bowl, and toss until combined. Stir in the guanciale or pancetta, Parmesan cheese, garlic, salt and black pepper.
- Pour the misture back into the skillet and cook over medium heat. Let the bottom set for a few minutes, then put the skillet into a preheated oven (350F) and bake until the top of the frittata is set and slightly browned, about 10 minutes.
- Remove from the oven, let it cool for a few minutes before cutting into pieces and serving. You may garnish it with additional Parmesan cheese if desired.
