
Italian Comfort Fish Stew

Ingredients:
- 2 tablespoons Olive oil
- 1 large Onion, chopped
- 4 Garlic cloves, minced
- 1/2 teaspoon Red pepper flakes
- 1 can Canned diced tomatoes
- 4 cups Fish stock
- 1/2 cup Fresh basil, chopped
- 1.5 pounds Fish fillets, cut into 2-inch pieces
- To taste Salt
- To taste Pepper
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and cook until translucent, about 5 minutes.
- Add the garlic and red pepper flakes, cooking for another minute.
- Stir in the tomatoes, fish stock, and fresh basil. Raise the heat to high and bring the mixture to a boil.
- Add the fish pieces to the pot, reduce the heat to medium-low, and simmer until the fish is cooked through, about 10-15 minutes.
- Season with salt and pepper to taste.
- Ladle the stew into bowls and serve hot.
