Italian Comfort Fish Stew

Ingredients:

  • 2 tablespoons Olive oil
  • 1 large Onion, chopped
  • 4 Garlic cloves, minced
  • 1/2 teaspoon Red pepper flakes
  • 1 can Canned diced tomatoes
  • 4 cups Fish stock
  • 1/2 cup Fresh basil, chopped
  • 1.5 pounds Fish fillets, cut into 2-inch pieces
  • To taste Salt
  • To taste Pepper

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until translucent, about 5 minutes.
  2. Add the garlic and red pepper flakes, cooking for another minute.
  3. Stir in the tomatoes, fish stock, and fresh basil. Raise the heat to high and bring the mixture to a boil.
  4. Add the fish pieces to the pot, reduce the heat to medium-low, and simmer until the fish is cooked through, about 10-15 minutes.
  5. Season with salt and pepper to taste.
  6. Ladle the stew into bowls and serve hot.
