Italian Comfort Egg Bruschetta

Ingredients:

  • 4 whole Eggs
  • 1 whole Baguette
  • 1 small bunch Fresh Basil Leaves
  • 4 tablespoons Olive Oil
  • 2 whole Garlic Cloves
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Slice the baguette into 1-inch thick pieces and set aside.
  2. Heat a frying pan over medium heat and add 2 tablespoons of olive oil.
  3. Crack the eggs into the pan and cook to your preferred level.
  4. While eggs are cooking, toast the baguette slices until golden brown.
  5. Rub each slice of toasted baguette with a garlic clove for flavor.
  6. Once eggs are done, place one on each slice of baguette.
  7. Sprinkle each egg with salt and pepper.
  8. Chop the basil leaves and sprinkle on top of each bruschetta.
  9. Drizzle the remaining olive oil over each bruschetta before serving as a comforting Italian snack.
