
Italian Citrus Glazed Chicken

Ingredients:
- 4 pieces Chicken Breasts
- 2 medium size Oranges
- 2 medium size Lemons
- 2 tablespoons Extra virgin olive oil
- 3 pieces Garlic Cloves
- 1 teaspoon Dry Italian Herbs
- to taste Salt
- to taste Black Pepper
Instructions:
- Rinse the chicken breasts and pat dry with kitchen towel.
- Peel and juice the oranges and lemons, keep the juice aside.
- Heat the olive oil in a large pan over medium heat. Add the chicken breasts, cook them until golden brown on both sides. Remove them from the pan temporarily.
- In the same pan, add crushed garlic, cook until golden. Then, add the orange and lemon juice, bring to a simmer.
- Add the dry Italian herbs to the simmering sauce, stir well.
- Return the chicken breasts to the pan, make sure all the chicken breasts are covered with the citrus sauce. Reduce the heat to low, cover the pan and let it cook for about 15 minutes, or until the chicken is cooked through and the sauce is slightly reduced and glazed.
- Season with salt and black pepper to taste.
- Serve the chicken warm with a side of whole grain pasta or steamed vegetables.
