
Italian Chicken Frittata

Ingredients:
- 2 pieces Chicken breast
- 2 tbsp Olive oil
- 2 Garlic cloves
- 1 Onion
- 1 Red bell pepper
- 6 Eggs
- 1/4 cup Low-fat milk
- 1/2 cup Grated Parmesan cheese
- 1/2 cup Basil leaves
- to taste Salt and black pepper
Instructions:
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Heat one tablespoon of olive oil in a skillet over medium heat. Add chicken breasts and cook until no longer pink in the center, about 7-10 minutes on each side. Once cooled, chop chicken into bite-sized pieces.
- In the same skillet, add another tablespoon of olive oil. Cook the minced garlic, chopped onion, and diced red bell pepper until softened.
- In a large bowl, beat the eggs with the milk, then mix in the cooked chicken and vegetables. Stir in the Parmesan cheese and chopped basil leaves. Season with salt and pepper.
- Pour the mixture into the greased baking dish and bake in the preheated oven for 20-25 minutes, or until the frittata is set and lightly browned on top.
