Italian Chicken Frittata

Ingredients:

  • 2 pieces Chicken breast
  • 2 tbsp Olive oil
  • 2 Garlic cloves
  • 1 Onion
  • 1 Red bell pepper
  • 6 Eggs
  • 1/4 cup Low-fat milk
  • 1/2 cup Grated Parmesan cheese
  • 1/2 cup Basil leaves
  • to taste Salt and black pepper

Instructions:

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Heat one tablespoon of olive oil in a skillet over medium heat. Add chicken breasts and cook until no longer pink in the center, about 7-10 minutes on each side. Once cooled, chop chicken into bite-sized pieces.
  3. In the same skillet, add another tablespoon of olive oil. Cook the minced garlic, chopped onion, and diced red bell pepper until softened.
  4. In a large bowl, beat the eggs with the milk, then mix in the cooked chicken and vegetables. Stir in the Parmesan cheese and chopped basil leaves. Season with salt and pepper.
  5. Pour the mixture into the greased baking dish and bake in the preheated oven for 20-25 minutes, or until the frittata is set and lightly browned on top.
