
Italian Chicken Breakfast Casserole

Ingredients:
- 2 pieces Boneless chicken breasts
- 2 teaspoons Italian seasoning
- 2 tablespoons Olive oil
- 2 tablespoons Butter
- 2 cloves Garlic
- 1 cup Freshly grated Parmesan cheese
- 1 cup Freshly grated mozzarella cheese
- 6 pieces Eggs
- 1 cup Whole milk
- 1/4 cup Chopped fresh basil
- To taste Salt and pepper
Instructions:
- Preheat your oven to 375 degrees F (190 degrees C).
- Season the chicken breasts with the Italian seasoning, salt, and pepper.
- Heat the olive oil and butter together in a large frying pan over medium heat.
- Cook the seasoned chicken in the pan until it is no longer pink inside, about 7 to 10 minutes per side. Remove from heat and leave to cool.
- Once the chicken is cool, chop it into bite-sized pieces.
- Crack the eggs into a large mixing bowl, add the milk, and whisk together until well mixed.
- Add the chopped chicken, grated cheeses, chopped basil, and minced garlic to the egg mixture, and mix well.
- Pour the mixture into a greased baking dish.
- Bake in the preheated oven for about 30 to 35 minutes, or until the top is golden and the casserole is set.
- Allow to cool for 5 minutes before slicing and serving.
