Italian Chicken Breakfast Casserole

Ingredients:

  • 2 pieces Boneless chicken breasts
  • 2 teaspoons Italian seasoning
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 2 cloves Garlic
  • 1 cup Freshly grated Parmesan cheese
  • 1 cup Freshly grated mozzarella cheese
  • 6 pieces Eggs
  • 1 cup Whole milk
  • 1/4 cup Chopped fresh basil
  • To taste Salt and pepper

Instructions:

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Season the chicken breasts with the Italian seasoning, salt, and pepper.
  3. Heat the olive oil and butter together in a large frying pan over medium heat.
  4. Cook the seasoned chicken in the pan until it is no longer pink inside, about 7 to 10 minutes per side. Remove from heat and leave to cool.
  5. Once the chicken is cool, chop it into bite-sized pieces.
  6. Crack the eggs into a large mixing bowl, add the milk, and whisk together until well mixed.
  7. Add the chopped chicken, grated cheeses, chopped basil, and minced garlic to the egg mixture, and mix well.
  8. Pour the mixture into a greased baking dish.
  9. Bake in the preheated oven for about 30 to 35 minutes, or until the top is golden and the casserole is set.
  10. Allow to cool for 5 minutes before slicing and serving.
