
Italian Chicken and Tomato Breakfast Skillet

Ingredients:
- 2 tablespoons olive oil
- 2 whole boneless, skinless chicken breasts
- 1 cup cherry tomatoes
- 2 cloves garlic
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup mozzarella cheese
- 1/4 cup fresh basil
- 4 whole eggs
Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add chicken breasts to skillet and cook until golden brown and cooked through, about 6-8 minutes per side. Remove chicken from skillet and set aside.
- In the same skillet, add cherry tomatoes and minced garlic. Cook until tomatoes start to burst and release their juices.
- Stir in Italian seasoning, salt, and pepper.
- Chop chicken into bite-sized pieces and return to skillet. Stir well to combine.
- Sprinkle mozzarella cheese over the top of the chicken and tomato mixture.
- Crack eggs directly into the skillet, placing them evenly around the pan.
- Cover skillet and cook until eggs are cooked to your liking and cheese is melted.
- Sprinkle with fresh basil before serving.
