Italian Chicken and Tomato Breakfast Skillet

Ingredients:

  • 2 tablespoons olive oil
  • 2 whole boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mozzarella cheese
  • 1/4 cup fresh basil
  • 4 whole eggs

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken breasts to skillet and cook until golden brown and cooked through, about 6-8 minutes per side. Remove chicken from skillet and set aside.
  3. In the same skillet, add cherry tomatoes and minced garlic. Cook until tomatoes start to burst and release their juices.
  4. Stir in Italian seasoning, salt, and pepper.
  5. Chop chicken into bite-sized pieces and return to skillet. Stir well to combine.
  6. Sprinkle mozzarella cheese over the top of the chicken and tomato mixture.
  7. Crack eggs directly into the skillet, placing them evenly around the pan.
  8. Cover skillet and cook until eggs are cooked to your liking and cheese is melted.
  9. Sprinkle with fresh basil before serving.
