Italian Brown Rice Medley

Ingredients:

  • 1 cup Brown Rice
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 medium Bell Pepper
  • 1 medium Zucchini
  • 2 medium Tomatoes
  • 1/2 cup Parmesan Cheese
  • To taste Salt and Pepper
  • A handful Fresh Basil

Instructions:

  1. 1. Rinse the brown rice thoroughly under cold water and cook according to package instructions.
  2. 2. While the rice is cooking, heat the olive oil in a large pan over medium heat. Add the chopped garlic, onion, bell pepper, and zucchini. Cook until the vegetables are tender.
  3. 3. Add the chopped tomatoes to the pan and cook until they start to break down.
  4. 4. Once the rice is done, add it to the pan with the vegetables. Stir in the parmesan cheese, and season with salt and pepper.
  5. 5. Just before serving, stir in the fresh basil. Enjoy this hearty and healthy Italian Brown Rice Medley!
