
Italian Brown Rice Medley

Ingredients:
- 1 cup Brown Rice
- 1 tablespoon Olive Oil
- 2 cloves Garlic
- 1 medium Onion
- 1 medium Bell Pepper
- 1 medium Zucchini
- 2 medium Tomatoes
- 1/2 cup Parmesan Cheese
- To taste Salt and Pepper
- A handful Fresh Basil
Instructions:
- 1. Rinse the brown rice thoroughly under cold water and cook according to package instructions.
- 2. While the rice is cooking, heat the olive oil in a large pan over medium heat. Add the chopped garlic, onion, bell pepper, and zucchini. Cook until the vegetables are tender.
- 3. Add the chopped tomatoes to the pan and cook until they start to break down.
- 4. Once the rice is done, add it to the pan with the vegetables. Stir in the parmesan cheese, and season with salt and pepper.
- 5. Just before serving, stir in the fresh basil. Enjoy this hearty and healthy Italian Brown Rice Medley!
