
Italian Breakfast Rice Frittata

Ingredients:
- 2 cups Cooked Rice
- 6 whole Eggs
- 1 cup Grated parmesan cheese
- 1/4 cup Chopped fresh basil
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
Instructions:
- In a bowl, beat the eggs and add in the rice, cheese, basil, salt, and pepper. Mix well.
- Heat olive oil in a non-stick pan over medium heat.
- Pour the rice and egg mixture into the pan, spreading evenly.
- Cook for 7-8 minutes or until the edges of the frittata are golden brown and the center is set. You can cover the pan for the last 3-4 minutes to ensure the middle cooks through.
- Remove the pan from the heat, let the frittata cool for a couple of minutes, then slice and serve.
