Italian Breakfast Rice Frittata

Ingredients:

  • 2 cups Cooked Rice
  • 6 whole Eggs
  • 1 cup Grated parmesan cheese
  • 1/4 cup Chopped fresh basil
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions:

  1. In a bowl, beat the eggs and add in the rice, cheese, basil, salt, and pepper. Mix well.
  2. Heat olive oil in a non-stick pan over medium heat.
  3. Pour the rice and egg mixture into the pan, spreading evenly.
  4. Cook for 7-8 minutes or until the edges of the frittata are golden brown and the center is set. You can cover the pan for the last 3-4 minutes to ensure the middle cooks through.
  5. Remove the pan from the heat, let the frittata cool for a couple of minutes, then slice and serve.
