
Italian Breakfast Rice Casserole

Ingredients:
- 1 cup Arborio Rice
- 2 tablespoons Olive Oil
- 1 medium, chopped Onion
- 2 cloves, minced Garlic
- 2 links, chopped Italian Sausage
- 2 cups, tightly packed Spinach
- 1 cup, shredded Mozzarella Cheese
- 3 cups Chicken Broth
- 4 large Eggs
- To Taste Salt and Pepper
Instructions:
- Heat olive oil in a large oven-safe pan over medium heat.
- Cook onions until translucent, then add garlic and sausage.
- When the sausage is browned, stir in rice and cook until toasted.
- Add chicken broth one cup at a time, allowing each to be absorbed before adding the next.
- When all broth has been absorbed, stir in spinach and half the mozzarella.
- Create wells in the rice mixture, and crack an egg into each.
- Sprinkle remaining mozzarella over the top, then transfer pan to a preheated 375°F oven.
- Bake for 10-15 minutes, or until eggs are cooked to your liking and cheese is melted.
- Remove from oven and season with salt and pepper to taste before serving.
