Italian Breakfast Rice Casserole

Ingredients:

  • 1 cup Arborio Rice
  • 2 tablespoons Olive Oil
  • 1 medium, chopped Onion
  • 2 cloves, minced Garlic
  • 2 links, chopped Italian Sausage
  • 2 cups, tightly packed Spinach
  • 1 cup, shredded Mozzarella Cheese
  • 3 cups Chicken Broth
  • 4 large Eggs
  • To Taste Salt and Pepper

Instructions:

  1. Heat olive oil in a large oven-safe pan over medium heat.
  2. Cook onions until translucent, then add garlic and sausage.
  3. When the sausage is browned, stir in rice and cook until toasted.
  4. Add chicken broth one cup at a time, allowing each to be absorbed before adding the next.
  5. When all broth has been absorbed, stir in spinach and half the mozzarella.
  6. Create wells in the rice mixture, and crack an egg into each.
  7. Sprinkle remaining mozzarella over the top, then transfer pan to a preheated 375°F oven.
  8. Bake for 10-15 minutes, or until eggs are cooked to your liking and cheese is melted.
  9. Remove from oven and season with salt and pepper to taste before serving.
