Italian Breakfast Pork Stir-fry

Ingredients:

  • 1 pound Lean pork tenderloin
  • 2 whole Garlic cloves
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes
  • 1 teaspoon Italian seasoning
  • 1 Red bell pepper
  • 2 cups Spinach
  • 4 whole Eggs
  • to taste Salt and pepper

Instructions:

  1. 1. Cut the pork tenderloin into thin strips.
  2. 2. Heat 1 tablespoon of the olive oil in a large non-stick skillet over medium-high heat.
  3. 3. Add the pork to the skillet and season with the Italian seasoning, salt, and pepper. Cook until the pork is browned and cooked through, about 5-7 minutes. Remove the pork from the skillet.
  4. 4. In the same skillet, heat the remaining tablespoon of olive oil. Add the garlic and cook until fragrant, about 30 seconds.
  5. 5. Add the cherry tomatoes and red bell pepper. Cook until the vegetables are slightly softened, about 5 minutes.
  6. 6. Stir in the spinach and cook until it has wilted, about 2 minutes.
  7. 7. Return the pork to the skillet and stir until it is heated through.
  8. 8. In a separate non-stick skillet, fry the eggs to your preferred level of doneness. Season with salt and pepper.
  9. 9. To serve, divide the pork and vegetable mixture among four plates. Top each plate with a fried egg.
