
Italian Breakfast Pork Stir-fry

Ingredients:
- 1 pound Lean pork tenderloin
- 2 whole Garlic cloves
- 2 tablespoons Olive oil
- 1 cup Cherry tomatoes
- 1 teaspoon Italian seasoning
- 1 Red bell pepper
- 2 cups Spinach
- 4 whole Eggs
- to taste Salt and pepper
Instructions:
- 1. Cut the pork tenderloin into thin strips.
- 2. Heat 1 tablespoon of the olive oil in a large non-stick skillet over medium-high heat.
- 3. Add the pork to the skillet and season with the Italian seasoning, salt, and pepper. Cook until the pork is browned and cooked through, about 5-7 minutes. Remove the pork from the skillet.
- 4. In the same skillet, heat the remaining tablespoon of olive oil. Add the garlic and cook until fragrant, about 30 seconds.
- 5. Add the cherry tomatoes and red bell pepper. Cook until the vegetables are slightly softened, about 5 minutes.
- 6. Stir in the spinach and cook until it has wilted, about 2 minutes.
- 7. Return the pork to the skillet and stir until it is heated through.
- 8. In a separate non-stick skillet, fry the eggs to your preferred level of doneness. Season with salt and pepper.
- 9. To serve, divide the pork and vegetable mixture among four plates. Top each plate with a fried egg.
