Italian Breakfast Pork Scramble

Ingredients:

  • 2 tablespoons olive oil
  • 4 pcs pork sausages, casings removed
  • 1 pc red bell pepper, diced
  • 1 pc white onions, diced
  • 2 pcs garlic cloves, minced
  • 6 pcs eggs
  • 1/4 cup whole milk
  • 1 cup mozzarella cheese, shredded
  • to taste salt
  • to taste black pepper
  • for garnish fresh basil, chopped

Instructions:

  1. Heat oil in a large non-stick skillet over medium heat. Add sausage and cook until browned and no longer pink. Remove from skillet and set aside.
  2. In the same skillet, add the bell pepper, onions and garlic. Cook for 3-4 minutes until vegetables are softened.
  3. In a large bowl, beat the eggs and milk together until well combined. Season with salt and pepper. Pour the egg mixture into the skillet.
  4. Cook, gently scrambling the eggs with a spatula, until eggs are set.
  5. Return the cooked sausage to the skillet, stirring them into the eggs. Sprinkle the shredded mozzarella evenly over the top.
  6. Cover the skillet and reduce the heat to low. Cook until the cheese is melted and bubbly.
  7. Garnish with fresh basil, serve immediately and enjoy.
