
Italian Breakfast Pork Scramble

Ingredients:
- 2 tablespoons olive oil
- 4 pcs pork sausages, casings removed
- 1 pc red bell pepper, diced
- 1 pc white onions, diced
- 2 pcs garlic cloves, minced
- 6 pcs eggs
- 1/4 cup whole milk
- 1 cup mozzarella cheese, shredded
- to taste salt
- to taste black pepper
- for garnish fresh basil, chopped
Instructions:
- Heat oil in a large non-stick skillet over medium heat. Add sausage and cook until browned and no longer pink. Remove from skillet and set aside.
- In the same skillet, add the bell pepper, onions and garlic. Cook for 3-4 minutes until vegetables are softened.
- In a large bowl, beat the eggs and milk together until well combined. Season with salt and pepper. Pour the egg mixture into the skillet.
- Cook, gently scrambling the eggs with a spatula, until eggs are set.
- Return the cooked sausage to the skillet, stirring them into the eggs. Sprinkle the shredded mozzarella evenly over the top.
- Cover the skillet and reduce the heat to low. Cook until the cheese is melted and bubbly.
- Garnish with fresh basil, serve immediately and enjoy.
