Italian Breakfast Pasta

Ingredients:

  • 200 grams Spaghetti
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1/2 teaspoon Red pepper flakes
  • 4 Eggs
  • 1/2 cup Parmesan cheese
  • 1/4 cup Fresh basil leaves
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Fill a large pot with salted water and bring it to a boil. Add the spaghetti and cook until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and sauté until the garlic is fragrant.
  3. Crack the eggs into the skillet and scramble them with the garlic and red pepper flakes. When the eggs are nearly cooked, stir in the cooked spaghetti.
  4. Remove the skillet from the heat and stir in the Parmesan cheese. The heat from the pasta and eggs will melt the cheese. Season with salt and black pepper.
  5. Divide the pasta between two plates. Garnish with the fresh basil leaves. Serve immediately.
