Italian Breakfast Frittata

Ingredients:

  • 2 Tbsp Olive oil
  • 1 whole Red bell pepper
  • 1 whole Yellow onion
  • 2 whole Garlic cloves
  • 1 cup Italian sausage
  • 6 whole Eggs
  • 1 cup Milk
  • 1 Tsp Italian seasoning
  • 1 cup Mozzarella cheese
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 375 degrees.
  2. Heat the olive oil over medium heat in an oven-safe skillet.
  3. Add the diced bell pepper and onion to the skillet and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for another minute.
  5. Add the Italian sausage to the skillet and cook until no pink remains.
  6. In a bowl, whisk together the eggs, milk, Italian seasoning, and a pinch of salt and pepper.
  7. Pour the egg mixture over the sausage and veggies in the skillet, making sure it's evenly distributed.
  8. Sprinkle the top with the shredded mozzarella cheese.
  9. Place the skillet in the preheated oven and bake for about 15 minutes, or until the eggs are set and the cheese is nicely browned.
  10. Let the frittata cool for a few minutes before slicing and serving.
