Italian Breakfast Fish Casserole

Ingredients:

  • 500 grams White fish fillet
  • 2 tablespoons Olive oil
  • 150 grams Cherry tomatoes
  • 2 cloves Garlic
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • handful Fresh basil
  • 200 grams Mozzarella cheese
  • 4 large Eggs

Instructions:

  1. Preheat the oven to 200°C (390°F).
  2. Heat the olive oil in a pan over medium heat. Add the garlic and sauté until fragrant.
  3. Add the cherry tomatoes and simmer until they start to break down. Add the Italian seasoning, salt, and pepper.
  4. Place the fish in a baking dish and cover it with the tomato mixture.
  5. Sprinkle the mozzarella cheese on top and bake in the oven for about 20 minutes or until the fish is cooked through.
  6. Meanwhile, cook the eggs to your liking (scrambled, poached, fried).
  7. When the fish is done, remove the dish from the oven and top it with the cooked eggs and a handful of fresh basil.
  8. Serve immediately while hot.
