
Italian Breakfast Fish Casserole

Ingredients:
- 500 grams White fish fillet
- 2 tablespoons Olive oil
- 150 grams Cherry tomatoes
- 2 cloves Garlic
- 1 teaspoon Italian seasoning
- to taste Salt and pepper
- handful Fresh basil
- 200 grams Mozzarella cheese
- 4 large Eggs
Instructions:
- Preheat the oven to 200°C (390°F).
- Heat the olive oil in a pan over medium heat. Add the garlic and sauté until fragrant.
- Add the cherry tomatoes and simmer until they start to break down. Add the Italian seasoning, salt, and pepper.
- Place the fish in a baking dish and cover it with the tomato mixture.
- Sprinkle the mozzarella cheese on top and bake in the oven for about 20 minutes or until the fish is cooked through.
- Meanwhile, cook the eggs to your liking (scrambled, poached, fried).
- When the fish is done, remove the dish from the oven and top it with the cooked eggs and a handful of fresh basil.
- Serve immediately while hot.
