Italian Breakfast Cod with Tomato Sauce

Ingredients:

  • 2 pieces Cod fillets
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 cup Cherry tomatoes
  • 1/2 cup Fresh basil leaves
  • To taste Sea salt
  • To taste Black pepper

Instructions:

  1. Start by heating olive oil in a non-stick pan over medium heat.
  2. Add the garlic to the pan and stir until it's golden brown.
  3. Add the cherry tomatoes, fresh basil leaves, sea salt, and black pepper to the pan. Stir the ingredients well and let them cook for about 10 minutes.
  4. Place the cod fillets on top of the tomato and basil mixture, cover the pan, and let it cook for about 20 minutes or until the cod is fully cooked.
  5. Plate your dish and garnish with additional fresh basil if desired. Serve hot and enjoy your Italian Breakfast Cod with Tomato Sauce!
