
Italian Beef Breakfast Skillet

Ingredients:
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 medium, chopped onion
- 2 cloves, minced garlic
- 2 medium, diced bell peppers
- 1 teaspoon Italian herbs
- to taste salt
- to taste pepper
- 2 large, chopped tomatoes
- 4 eggs
- 1 cup, chopped spinach
- 0.5 cup, grated Parmesan cheese
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the ground beef, onion, garlic, bell peppers, Italian herbs, salt, and pepper. Cook until the beef is browned and the vegetables are tender, about 10 minutes.
- Add the chopped tomatoes to the skillet and stir to combine. Cover and cook for 10 minutes, or until the tomatoes are softened.
- Make four wells in the skillet mixture. Crack an egg into each well. Cover and cook for 5-7 minutes, or until the eggs are cooked to your liking.
- Sprinkle the chopped spinach and grated Parmesan cheese over the top of the skillet. Cover and cook for another 2-3 minutes, or until the spinach is wilted and the cheese is melted.
- Serve the skillet hot, with extra Parmesan cheese and fresh herbs if desired.
