Italian Beef Breakfast Hash

Ingredients:

  • 1 pound Beef, ground
  • 2 large Potatoes
  • 0.5 Red onion
  • 2 Garlic cloves
  • 1 teaspoon Italian seasoning
  • 1 bunch Fresh basil leaves
  • 4 Eggs
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper
  • to taste Parmesan cheese, grated

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until they become fragrant.
  2. Add the ground beef to the skillet, breaking it up with a spatula. Cook until it is fully browned.
  3. Cut the potatoes into small cubes and add to the skillet, stirring occasionally, until they are soft and golden brown. Sprinkle the Italian seasoning over the mixture.
  4. Crack the eggs over the hash, being careful not to break the yolks. Cover the skillet and cook until the eggs reach your desired level of doneness.
  5. Season with salt and black pepper, toss in fresh basil leaves, and sprinkle with Parmesan cheese before serving.
