
Italian Beef Breakfast Hash

Ingredients:
- 1 pound Beef, ground
- 2 large Potatoes
- 0.5 Red onion
- 2 Garlic cloves
- 1 teaspoon Italian seasoning
- 1 bunch Fresh basil leaves
- 4 Eggs
- 2 tablespoons Olive oil
- to taste Salt
- to taste Black pepper
- to taste Parmesan cheese, grated
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking until they become fragrant.
- Add the ground beef to the skillet, breaking it up with a spatula. Cook until it is fully browned.
- Cut the potatoes into small cubes and add to the skillet, stirring occasionally, until they are soft and golden brown. Sprinkle the Italian seasoning over the mixture.
- Crack the eggs over the hash, being careful not to break the yolks. Cover the skillet and cook until the eggs reach your desired level of doneness.
- Season with salt and black pepper, toss in fresh basil leaves, and sprinkle with Parmesan cheese before serving.
