Italian Baked Rice

Ingredients:

  • 2 cups Arborio rice
  • 4.5 cups Chicken broth
  • 0.25 cup Olive oil
  • 1 piece Onion, finely chopped
  • 2 pieces Garlic cloves, minced
  • 1 cup Grated Parmesan cheese
  • 0.25 cup Fresh basil leaves, chopped
  • to taste Salt and pepper

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large oven-safe pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  3. Add the rice to the pot and stir until coated with the olive oil. Then pour in the chicken broth, and bring to a boil.
  4. Remove the pot from heat, cover, and transfer to the preheated oven.
  5. Bake in the oven for 35 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from oven. Stir in the Parmesan cheese and fresh basil. Season with salt and pepper to taste.
  7. Serve warm.
