
Italian Baked Rice

Ingredients:
- 2 cups Arborio rice
- 4.5 cups Chicken broth
- 0.25 cup Olive oil
- 1 piece Onion, finely chopped
- 2 pieces Garlic cloves, minced
- 1 cup Grated Parmesan cheese
- 0.25 cup Fresh basil leaves, chopped
- to taste Salt and pepper
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a large oven-safe pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the rice to the pot and stir until coated with the olive oil. Then pour in the chicken broth, and bring to a boil.
- Remove the pot from heat, cover, and transfer to the preheated oven.
- Bake in the oven for 35 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from oven. Stir in the Parmesan cheese and fresh basil. Season with salt and pepper to taste.
- Serve warm.
