Italian Baked Chicken with Summer Veggies

Ingredients:

  • 4 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Sea salt
  • 1 teaspoon Black pepper
  • 2 minced Garlic cloves
  • 2 chopped Tomatoes
  • 2 sliced Zucchini
  • 2 chopped Bell peppers
  • a few leaves Fresh basil

Instructions:

  1. Preheat the oven to 200°C (approx 2\ to 400°F).
  2. Place the chicken breasts in a baking dish. Sprinkle both sides with salt, pepper and half of the Italian seasoning.
  3. Drizzle one tablespoon of olive oil over the chicken.
  4. In a separate bowl, combine tomatoes, zucchini and bell peppers. Add minced garlic, remaining Italian seasoning and one tablespoon of olive oil. Toss until the vegetables are evenly coated.
  5. Spread the vegetable mixture around the chicken in the baking dish.
  6. Bake for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Garnish with fresh basil before serving.
