
Italian Baked Chicken with Summer Veggies

Ingredients:
- 4 pieces Chicken breasts
- 2 tablespoons Olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon Sea salt
- 1 teaspoon Black pepper
- 2 minced Garlic cloves
- 2 chopped Tomatoes
- 2 sliced Zucchini
- 2 chopped Bell peppers
- a few leaves Fresh basil
Instructions:
- Preheat the oven to 200°C (approx 2\ to 400°F).
- Place the chicken breasts in a baking dish. Sprinkle both sides with salt, pepper and half of the Italian seasoning.
- Drizzle one tablespoon of olive oil over the chicken.
- In a separate bowl, combine tomatoes, zucchini and bell peppers. Add minced garlic, remaining Italian seasoning and one tablespoon of olive oil. Toss until the vegetables are evenly coated.
- Spread the vegetable mixture around the chicken in the baking dish.
- Bake for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
- Garnish with fresh basil before serving.
