
Italian Baked Chicken with Summer Vegetables

Ingredients:
- 4 pieces Boneless, skinless chicken breasts
- 2 medium Fresh zucchini
- 1 cup Cherry tomatoes
- 1 tablespoon Olive oil
- 2 Garlic cloves, minced
- 1 teaspoon Italian herbs, dried
- to taste Salt
- to taste Ground black pepper
Instructions:
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Rinse the chicken breasts, then pat them dry with a clean kitchen towel.
- Dice the zucchini and place it in a large mixing bowl with the cherry tomatoes.
- Add the olive oil, minced garlic, dried Italian herbs, and a pinch of salt and pepper to the vegetables. Toss everything together until the vegetables are evenly coated.
- Arrange the chicken breasts in a large baking dish. Surround them with the zucchini and cherry tomatoes.
- Bake for 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
- Serve hot, with fresh basil leaves on top if desired.
