Italian Baked Chicken with Summer Vegetables

Ingredients:

  • 4 pieces Boneless, skinless chicken breasts
  • 2 medium Fresh zucchini
  • 1 cup Cherry tomatoes
  • 1 tablespoon Olive oil
  • 2 Garlic cloves, minced
  • 1 teaspoon Italian herbs, dried
  • to taste Salt
  • to taste Ground black pepper

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Rinse the chicken breasts, then pat them dry with a clean kitchen towel.
  3. Dice the zucchini and place it in a large mixing bowl with the cherry tomatoes.
  4. Add the olive oil, minced garlic, dried Italian herbs, and a pinch of salt and pepper to the vegetables. Toss everything together until the vegetables are evenly coated.
  5. Arrange the chicken breasts in a large baking dish. Surround them with the zucchini and cherry tomatoes.
  6. Bake for 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.
  7. Serve hot, with fresh basil leaves on top if desired.
