Italian Baked Chicken & Tomatoes

Ingredients:

  • 4 pieces Boneless chicken breasts
  • 2 cups Cherry tomatoes
  • 2 tablespoons Olive oil
  • 2 teaspoons Italian seasoning mix
  • 3 cloves Garlic
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a large baking dish, place the chicken breasts. Drizzle with half of the olive oil, then sprinkle with half of the Italian seasoning. Add salt and pepper to taste.
  3. Cut the cherry tomatoes in half and place them around the chicken in the baking dish. Drizzle the remaining olive oil over the tomatoes, and sprinkle them with the remaining Italian seasoning. Add salt and pepper to taste.
  4. Peel and mince the garlic, and sprinkle it over the chicken and tomatoes.
  5. Bake in the preheated oven for 25-30 minutes, until the chicken is no longer pink in the center and the tomatoes are roasted.
  6. Serve warm, and enjoy this quick and healthy Italian breakfast!
