Italian Baked Chicken Frittata

Ingredients:

  • 2 Skinless, boneless chicken breast
  • 1 tablespoon Olive oil
  • 1 cup Chopped onions
  • 1 cup Chopped bell peppers
  • 2 Garlic cloves, minced
  • 1 cup Chopped fresh basil
  • 6 Eggs
  • 1/2 cup Milk
  • 1 cup Grated Parmesan cheese
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Heat olive oil in a pan over medium heat. Add the chopped onions, peppers, and minced garlic, sauté until they are soft.
  3. Chop the chicken breast into small pieces and add them to the pan. Cook until the chicken is no longer pink.
  4. In a large bowl, whisk together the eggs, milk, Parmesan cheese, chopped basil, salt, and pepper.
  5. Add the cooked chicken and vegetables into the egg mixture, stir until combined.
  6. Pour the mixture into a greased baking dish. Bake in the preheated oven for about 30 minutes or until the top is golden brown and the frittata is set.
  7. Let it cool for a few minutes before slicing. Serve with a side of fresh fruit for a balanced breakfast.
