
Italian Baked Chicken Frittata

Ingredients:
- 2 Skinless, boneless chicken breast
- 1 tablespoon Olive oil
- 1 cup Chopped onions
- 1 cup Chopped bell peppers
- 2 Garlic cloves, minced
- 1 cup Chopped fresh basil
- 6 Eggs
- 1/2 cup Milk
- 1 cup Grated Parmesan cheese
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- Heat olive oil in a pan over medium heat. Add the chopped onions, peppers, and minced garlic, sauté until they are soft.
- Chop the chicken breast into small pieces and add them to the pan. Cook until the chicken is no longer pink.
- In a large bowl, whisk together the eggs, milk, Parmesan cheese, chopped basil, salt, and pepper.
- Add the cooked chicken and vegetables into the egg mixture, stir until combined.
- Pour the mixture into a greased baking dish. Bake in the preheated oven for about 30 minutes or until the top is golden brown and the frittata is set.
- Let it cool for a few minutes before slicing. Serve with a side of fresh fruit for a balanced breakfast.
