
Italian Baked Chicken for Summer Breakfast

Ingredients:
- 4 Boneless skinless chicken breasts
- 2 tsp Italian seasoning
- 2 tbsp Olive oil
- 2 Tomatoes, chopped
- 1 tbsp Balsamic vinegar
- 2 cloves Garlic, minced
- handful Fresh basil, chopped
- to taste Salt
- to taste Black pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Rub the chicken breasts with the olive oil, then sprinkle the Italian seasoning, salt, and pepper over them.
- Place the chicken in a baking dish and bake for about 20 minutes.
- While the chicken is baking, combine the chopped tomatoes, balsamic vinegar, minced garlic, and chopped basil in a bowl.
- After 20 minutes, remove the chicken from the oven and spoon the tomato mixture over the chicken.
- Return the dish to the oven and bake for another 15 minutes, or until the chicken is cooked through and the tomatoes are soft.
- Serve hot for a hearty and healthy summer breakfast.
