Italian Baked Chicken for Summer Breakfast

Ingredients:

  • 4 Boneless skinless chicken breasts
  • 2 tsp Italian seasoning
  • 2 tbsp Olive oil
  • 2 Tomatoes, chopped
  • 1 tbsp Balsamic vinegar
  • 2 cloves Garlic, minced
  • handful Fresh basil, chopped
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Rub the chicken breasts with the olive oil, then sprinkle the Italian seasoning, salt, and pepper over them.
  3. Place the chicken in a baking dish and bake for about 20 minutes.
  4. While the chicken is baking, combine the chopped tomatoes, balsamic vinegar, minced garlic, and chopped basil in a bowl.
  5. After 20 minutes, remove the chicken from the oven and spoon the tomato mixture over the chicken.
  6. Return the dish to the oven and bake for another 15 minutes, or until the chicken is cooked through and the tomatoes are soft.
  7. Serve hot for a hearty and healthy summer breakfast.
