
Italian Baked Chicken bruschetta

Ingredients:
- 2 pcs Chicken Breast
- 4 pcs Tomatoes
- 2 cloves Garlic
- 10 leaves Fresh Basil
- 2 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- to taste Salt
- to taste Black Pepper
- 4 slices Whole Grain Bread
Instructions:
- Preheat the oven to 180C/350F. Season both sides of chicken with salt and pepper and then bake it in the oven for 20-25mins until it gets fully cooked and turned slightly golden.
- While the chicken is being cooked, dice the tomatoes and mince the garlic. In a bowl, mix the tomatoes, garlic, fresh basil, olive oil, and balsamic vinegar.
- Season it with salt and black pepper according to taste and let it rest.
- When the chicken is ready, let it rest for 5 mins. Then, cut it into thin slices.
- Toast the whole grain bread in a toaster until crispy and golden.
- Spread the tomato mixture on each slice of toast, place the sliced chicken on top, and serve.
