Italian Baked Chicken bruschetta

Ingredients:

  • 2 pcs Chicken Breast
  • 4 pcs Tomatoes
  • 2 cloves Garlic
  • 10 leaves Fresh Basil
  • 2 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • to taste Salt
  • to taste Black Pepper
  • 4 slices Whole Grain Bread

Instructions:

  1. Preheat the oven to 180C/350F. Season both sides of chicken with salt and pepper and then bake it in the oven for 20-25mins until it gets fully cooked and turned slightly golden.
  2. While the chicken is being cooked, dice the tomatoes and mince the garlic. In a bowl, mix the tomatoes, garlic, fresh basil, olive oil, and balsamic vinegar.
  3. Season it with salt and black pepper according to taste and let it rest.
  4. When the chicken is ready, let it rest for 5 mins. Then, cut it into thin slices.
  5. Toast the whole grain bread in a toaster until crispy and golden.
  6. Spread the tomato mixture on each slice of toast, place the sliced chicken on top, and serve.
