
Italian Baked Chicken Breakfast Skillet

Ingredients:
- 2 pieces Chicken breasts
- 4 pieces Large eggs
- 2 pieces Ripe tomatoes
- 1/2 cup Fresh basil
- 1 teaspoon Garlic powder
- 1 teaspoon Italian seasoning
- to taste Salt
- to taste Freshly ground black pepper
- 1 tablespoon Extra virgin olive oil
- 1/2 cup Fresh mozzarella cheese
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with garlic powder, Italian seasoning, salt and pepper.
- Heat the olive oil in an ovenproof skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side, until golden brown.
- While the chicken is cooking, slice the tomatoes and the mozzarella cheese.
- Remove the skillet from heat. Arrange the tomatoes and mozzarella cheese slices on top of the chicken.
- Bake the skillet in the preheated oven for 10-12 minutes, until the chicken is fully cooked and the cheese is melted.
- While the skillet is baking, fry the eggs in a separate pan to your preferred level of done-ness.
- Remove the skillet from the oven, top with fresh basil and the fried eggs.
- Serve immediately, enjoy this light, delicious, and nutritious Italian-style breakfast dish!
