Italian Baked Chicken Breakfast Skillet

Ingredients:

  • 2 pieces Chicken breasts
  • 4 pieces Large eggs
  • 2 pieces Ripe tomatoes
  • 1/2 cup Fresh basil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste Freshly ground black pepper
  • 1 tablespoon Extra virgin olive oil
  • 1/2 cup Fresh mozzarella cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with garlic powder, Italian seasoning, salt and pepper.
  3. Heat the olive oil in an ovenproof skillet over medium heat. Add the chicken and cook for 5-7 minutes on each side, until golden brown.
  4. While the chicken is cooking, slice the tomatoes and the mozzarella cheese.
  5. Remove the skillet from heat. Arrange the tomatoes and mozzarella cheese slices on top of the chicken.
  6. Bake the skillet in the preheated oven for 10-12 minutes, until the chicken is fully cooked and the cheese is melted.
  7. While the skillet is baking, fry the eggs in a separate pan to your preferred level of done-ness.
  8. Remove the skillet from the oven, top with fresh basil and the fried eggs.
  9. Serve immediately, enjoy this light, delicious, and nutritious Italian-style breakfast dish!
