
Indian Vegetable Upma

Ingredients:
- 1 cup Semolina (Sooji)
- 1 medium Onion (finely chopped)
- 1.5 cups Assorted vegetables (carrots, peas, beans, chopped)
- 2 sliced Green chilli
- 1 tsp Mustard seeds
- 1 tsp Urad dal (white lentils)
- few Curry leaves
- 3 tbsp Olive oil
- to taste Salt
- 2 cups Water
Instructions:
- Heat a pan on medium heat, add the semolina (sooji), and roast until it is lightly golden and aromatic. Keep stirring to ensure it doesn’t burn. Once done, transfer to a plate and set aside.
- In the same pan, add olive oil. Once the oil is hot, add mustard seeds, urad dal, green chillies, and curry leaves. Fry these until the dal turns golden brown.
- Add finely chopped onions and cook until they turn translucent.
- Now, add the chopped vegetables and some salt. Mix well, cover, and cook until the vegetables are tender.
- Pour water into the pan and let it come to a boil. Following this, lower the heat.
- Slowly add in the roasted semolina, stirring constantly to avoid any lumps.
- Cover and cook on low heat for about 5-7 minutes or until the semolina is fully cooked and the upma is thick.
- Turn off the heat, leave it covered for a couple more minutes, and then fluff the upma with a fork. Serve hot with a side of coconut chutney, yogurt, or pickle of your choice.
