Indian Vegetable Pulao

Ingredients:

  • 2 cups Basmati Rice
  • 1.5 cups Mixed Vegetables (Carrots, peas, beans)
  • 1 medium size Onion
  • 2 cloves Garlic
  • 1 inch Ginger
  • 2 pieces Green chili
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Garam Masala
  • 0.5 teaspoon Turmeric powder
  • to taste Salt
  • 2 tablespoons Cooking oil
  • for garnish Fresh cilantro

Instructions:

  1. Wash the Basmati rice under cold water until the water runs clear. Then soak the rice in water for 15 minutes and then drain the water. Set the rice to the side.
  2. Finely chop the onion, garlic, ginger and green chilies.
  3. Heat oil in a pan and add the cumin seeds. Once they start crackling, add the chopped onion, garlic, ginger and green chilies. Saute until the onions turn translucent.
  4. Now add the mixed vegetables to the pan and stir well. Add the turmeric powder and salt. Cook for 5 minutes until the vegetables are tender.
  5. Add the drained Basmati rice to the pan and gently mix to combine. Don'r overmix as it can break the rice.
  6. Add the water to the pan and bring to a boil. Lower the heat, cover the pan and allow it to cook for 15-20 minutes or until the rice is cooked.
  7. Once cooked, sprinkle the garam masala over the rice and fluff with a fork.
  8. Garnish with freshly chopped cilantro.
