
Indian Style Spiced Pork and Vegetable Saute

Ingredients:
- 1 pound Boneless pork loin
- 1 teaspoon Turmeric
- 1 teaspoon Cumin seeds
- 1 teaspoon Coriander powder
- 1 cup Chopped Onion
- 2 cups Chopped mixed vegetables (carrots, peas, bell peppers, etc.)
- 1 teaspoon Garlic paste
- 1 teaspoon Ginger paste
- 2 Tomatoes
- 2 tablespoons Vegetable oil
- to taste Salt
- as required Water
- for garnish Fresh coriander leaves
Instructions:
- Cut the pork into small cubes.
- Heat oil in a deep frying pan on medium heat. Add cumin seeds, and after they splutter, add chopped onions to it.
- Sauté the onions until they turn golden brown.
- Add ginger and garlic paste to this and sauté for another minute.
- Next, add the pork cubes to this mixture and cook it on high heat for about 5 minutes till they turn brown.
- At this stage, reduce the heat and add turmeric, coriander powder, chopped tomatoes, and salt. Mix well.
- Cover the pan and let it cook on low heat for about 20 minutes or till the pork is cooked.
- In another pan, quickly sauté the mixed vegetables with a little oil and a pinch of salt till they are just cooked but still have a crunch.
- Add these vegetables to the pork and mix well. Adjust the seasoning if needed.
- Garnish with fresh coriander leaves and serve warm with Indian bread or rice.
