Indian Style Spiced Pork and Vegetable Saute

Ingredients:

  • 1 pound Boneless pork loin
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 1 cup Chopped Onion
  • 2 cups Chopped mixed vegetables (carrots, peas, bell peppers, etc.)
  • 1 teaspoon Garlic paste
  • 1 teaspoon Ginger paste
  • 2 Tomatoes
  • 2 tablespoons Vegetable oil
  • to taste Salt
  • as required Water
  • for garnish Fresh coriander leaves

Instructions:

  1. Cut the pork into small cubes.
  2. Heat oil in a deep frying pan on medium heat. Add cumin seeds, and after they splutter, add chopped onions to it.
  3. Sauté the onions until they turn golden brown.
  4. Add ginger and garlic paste to this and sauté for another minute.
  5. Next, add the pork cubes to this mixture and cook it on high heat for about 5 minutes till they turn brown.
  6. At this stage, reduce the heat and add turmeric, coriander powder, chopped tomatoes, and salt. Mix well.
  7. Cover the pan and let it cook on low heat for about 20 minutes or till the pork is cooked.
  8. In another pan, quickly sauté the mixed vegetables with a little oil and a pinch of salt till they are just cooked but still have a crunch.
  9. Add these vegetables to the pork and mix well. Adjust the seasoning if needed.
  10. Garnish with fresh coriander leaves and serve warm with Indian bread or rice.
