Indian-style Scrambled Eggs (Anda Bhurji)

Ingredients:

  • 4 units Eggs
  • 1 cup Onion, finely chopped
  • 1 cup Tomato, finely chopped
  • 2 units Green chili, finely chopped
  • 1/2 teaspoon Red chili powder
  • 1/4 teaspoon Turmeric powder
  • to taste Salt
  • 2 tablespoons Oil
  • Handful Fresh coriander leaves for garnishing

Instructions:

  1. Heat oil in a non-stick pan over medium heat. Add chopped onions and green chilies. Sauté until onions become translucent.
  2. Add the chopped tomatoes, red chili powder, turmeric powder, and salt. Mix well and cook until tomatoes are soft and well cooked.
  3. Break the eggs directly into the pan. Stir constantly to mix with the onion-tomato masala. Cook until eggs are scrambled and fully cooked.
  4. Garnish with fresh coriander leaves. Serve hot with toast or Indian roti for a delicious midnight indulgence.
