
Indian-style Scrambled Eggs (Anda Bhurji)

Ingredients:
- 4 units Eggs
- 1 cup Onion, finely chopped
- 1 cup Tomato, finely chopped
- 2 units Green chili, finely chopped
- 1/2 teaspoon Red chili powder
- 1/4 teaspoon Turmeric powder
- to taste Salt
- 2 tablespoons Oil
- Handful Fresh coriander leaves for garnishing
Instructions:
- Heat oil in a non-stick pan over medium heat. Add chopped onions and green chilies. Sauté until onions become translucent.
- Add the chopped tomatoes, red chili powder, turmeric powder, and salt. Mix well and cook until tomatoes are soft and well cooked.
- Break the eggs directly into the pan. Stir constantly to mix with the onion-tomato masala. Cook until eggs are scrambled and fully cooked.
- Garnish with fresh coriander leaves. Serve hot with toast or Indian roti for a delicious midnight indulgence.
