
Indian Style Midnight Cravings Fried Rice

Ingredients:
- 1 cup Basmati rice
- 1 tablespoon Vegetable oil
- 0.5 teaspoon Cumin seeds
- 1 small Onion
- 1 Green chilli
- 2 cloves Garlic
- 0.5 teaspoon Turmeric
- to taste Salt
- 2 tablespoons Fresh coriander
- 1 teaspoon Lemon juice
Instructions:
- 1. Rinse the basmati rice until water runs clear. Soak it in plenty of water for about 20-30 minutes.
- 2. In a large pot, bring water to a boil. Add soaked and drained rice, and cook until the rice is 70% cooked. Strain the rice and spread it on a flat surface to cool down.
- 3. In a pan, heat the oil. Add the cumin seeds and let them crackle.
- 4. Add the finely chopped onion and green chili. Sauté until the onion becomes soft.
- 5. Add the crushed garlic and turmeric. Mix well and fry for a minute.
- 6. Add the cooked rice and salt. Mix well and cook for a minute on medium flame. Make sure all the grains are coated with the spices.
- 7. Squeeze the lemon juice and sprinkle fresh chopped coriander. Mix well and turn off the heat.
