Indian Style Midnight Cravings Fried Rice

Ingredients:

  • 1 cup Basmati rice
  • 1 tablespoon Vegetable oil
  • 0.5 teaspoon Cumin seeds
  • 1 small Onion
  • 1 Green chilli
  • 2 cloves Garlic
  • 0.5 teaspoon Turmeric
  • to taste Salt
  • 2 tablespoons Fresh coriander
  • 1 teaspoon Lemon juice

Instructions:

  1. 1. Rinse the basmati rice until water runs clear. Soak it in plenty of water for about 20-30 minutes.
  2. 2. In a large pot, bring water to a boil. Add soaked and drained rice, and cook until the rice is 70% cooked. Strain the rice and spread it on a flat surface to cool down.
  3. 3. In a pan, heat the oil. Add the cumin seeds and let them crackle.
  4. 4. Add the finely chopped onion and green chili. Sauté until the onion becomes soft.
  5. 5. Add the crushed garlic and turmeric. Mix well and fry for a minute.
  6. 6. Add the cooked rice and salt. Mix well and cook for a minute on medium flame. Make sure all the grains are coated with the spices.
  7. 7. Squeeze the lemon juice and sprinkle fresh chopped coriander. Mix well and turn off the heat.
