
Indian-Style Fruit Curry

Ingredients:
- 2 cups diced assorted fruits (apples, grapes, bananas, and pears)
- 1 chopped onion
- 2 cloves garlic
- 1 teaspoon grated ginger
- 2 teaspoons curry powder
- 1/2 teaspoon turmeric
- 2 cups vegetable stock
- 1 cup coconut milk
- to taste salt
- 2 tablespoons vegetable oil
Instructions:
- 1. Heat oil in a pan, add chopped onions, and sauté until translucent.
- 2. Add minced garlic and grated ginger and fry until aromatic.
- 3. Add curry powder and turmeric, stir for a minute.
- 4. Add diced fruits and vegetable stock. Cook on low heat for 15 minutes.
- 5. Stir in the coconut milk and cook for another 2-3 minutes.
- 6. Season with salt and serve warm.
