Indian-Style Fruit Curry

Ingredients:

  • 2 cups diced assorted fruits (apples, grapes, bananas, and pears)
  • 1 chopped onion
  • 2 cloves garlic
  • 1 teaspoon grated ginger
  • 2 teaspoons curry powder
  • 1/2 teaspoon turmeric
  • 2 cups vegetable stock
  • 1 cup coconut milk
  • to taste salt
  • 2 tablespoons vegetable oil

Instructions:

  1. 1. Heat oil in a pan, add chopped onions, and sauté until translucent.
  2. 2. Add minced garlic and grated ginger and fry until aromatic.
  3. 3. Add curry powder and turmeric, stir for a minute.
  4. 4. Add diced fruits and vegetable stock. Cook on low heat for 15 minutes.
  5. 5. Stir in the coconut milk and cook for another 2-3 minutes.
  6. 6. Season with salt and serve warm.
