Indian-style Creamy Tomato Pasta

Ingredients:

  • 200 grams Pasta (of your choice)
  • 2 tablespoons Olive Oil
  • 1 large, finely chopped Onion
  • 3 finely minced Garlic Cloves
  • 2 finely chopped Green Chilies
  • 2 large, chopped Tomatoes
  • 2 tablespoons Tomato Puree
  • 1 teaspoon Curry Powder
  • 1 teaspoon Garam Masala
  • 1 cup Heavy Cream
  • to taste Salt
  • a handful chopped Coriander leaves

Instructions:

  1. Boil the pasta as per the instructions on the packet until al dente. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add the chopped onions, minced garlic, and finely chopped green chilies. Sauté until the onions are translucent.
  3. Add chopped tomatoes to the pan, cook until they break down into a mushy consistency. Add the tomato puree and mix well.
  4. To this tomato mixture, add curry powder and garam masala. Mix well and let it cook for a minute.
  5. Pour in the heavy cream and mix until it combines well with the tomato mixture. Bring to a simmer.
  6. Toss in the cooked pasta, mix well to make sure that every pasta piece is coated with the sauce. Adjust salt as per your preference.
  7. Let it cook for a couple of minutes on a low flame. Finally, sprinkle chopped coriander leaves, give a quick mix, and then turn off the flame.
