
Indian-style Creamy Tomato Pasta

Ingredients:
- 200 grams Pasta (of your choice)
- 2 tablespoons Olive Oil
- 1 large, finely chopped Onion
- 3 finely minced Garlic Cloves
- 2 finely chopped Green Chilies
- 2 large, chopped Tomatoes
- 2 tablespoons Tomato Puree
- 1 teaspoon Curry Powder
- 1 teaspoon Garam Masala
- 1 cup Heavy Cream
- to taste Salt
- a handful chopped Coriander leaves
Instructions:
- Boil the pasta as per the instructions on the packet until al dente. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add the chopped onions, minced garlic, and finely chopped green chilies. Sauté until the onions are translucent.
- Add chopped tomatoes to the pan, cook until they break down into a mushy consistency. Add the tomato puree and mix well.
- To this tomato mixture, add curry powder and garam masala. Mix well and let it cook for a minute.
- Pour in the heavy cream and mix until it combines well with the tomato mixture. Bring to a simmer.
- Toss in the cooked pasta, mix well to make sure that every pasta piece is coated with the sauce. Adjust salt as per your preference.
- Let it cook for a couple of minutes on a low flame. Finally, sprinkle chopped coriander leaves, give a quick mix, and then turn off the flame.
