
Indian Spiced Vegetable Curry

Ingredients:
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 large onion
- 3 garlic cloves
- 1 inch piece ginger
- 1 teaspoon turmeric powder
- 2 teaspoons coriander powder
- 1 teaspoon red chilli powder
- 2 cups chopped vegetables (carrots, peas, beans, potato, bell peppers)
- to taste salt
- 2 cups water
- for garnish fresh cilantro leaves
Instructions:
- Heat the oil in a large pan and add the cumin and mustard seeds. Once they start to sputter, add the chopped onion, garlic, and ginger. Stir until the onions are golden brown.
- Add the turmeric, coriander and red chilli powder to the pan. Stir well for a minute to let the spices release their flavor.
- Add the chopped vegetables to the pan and stir well to coat them in the spices. Season with salt.
- Pour the water into the pan, cover and simmer over medium heat for around 20 minutes, or until the vegetables are tender.
- Adjust the seasoning as needed. Transfer the curry into serving bowls, garnish with fresh cilantro leaves and serve hot.
