Indian Spiced Vegetable Curry

Ingredients:

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 large onion
  • 3 garlic cloves
  • 1 inch piece ginger
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon red chilli powder
  • 2 cups chopped vegetables (carrots, peas, beans, potato, bell peppers)
  • to taste salt
  • 2 cups water
  • for garnish fresh cilantro leaves

Instructions:

  1. Heat the oil in a large pan and add the cumin and mustard seeds. Once they start to sputter, add the chopped onion, garlic, and ginger. Stir until the onions are golden brown.
  2. Add the turmeric, coriander and red chilli powder to the pan. Stir well for a minute to let the spices release their flavor.
  3. Add the chopped vegetables to the pan and stir well to coat them in the spices. Season with salt.
  4. Pour the water into the pan, cover and simmer over medium heat for around 20 minutes, or until the vegetables are tender.
  5. Adjust the seasoning as needed. Transfer the curry into serving bowls, garnish with fresh cilantro leaves and serve hot.
