
Indian Spiced Scrambled Eggs (Egg Bhurji)

Ingredients:
- 8 Eggs
- 2 tablespoons Oil
- 1 cup Onion, finely chopped
- 1 Green chili, finely chopped
- 1 cup Tomatoes, chopped
- 0.5 teaspoon Red chili powder
- 0.5 teaspoon Turmeric powder
- 0.5 teaspoon Cumin seeds
- to taste Salt
- 1 handful Fresh coriander leaves, chopped
Instructions:
- Heat oil in a non-stick pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onions and green chili, cook until they turn golden brown.
- Add chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft.
- Crack the eggs into the pan and scramble them with the cooked mixture until they're fully cooked. Keep the heat on medium-low to prevent eggs from getting browned.
- Remove from heat, garnish with fresh chopped coriander leaves and serve hot with buttered toast or Indian bread(chapati).
