Indian Spiced Scrambled Eggs (Egg Bhurji)

Ingredients:

  • 8 Eggs
  • 2 tablespoons Oil
  • 1 cup Onion, finely chopped
  • 1 Green chili, finely chopped
  • 1 cup Tomatoes, chopped
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Cumin seeds
  • to taste Salt
  • 1 handful Fresh coriander leaves, chopped

Instructions:

  1. Heat oil in a non-stick pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the finely chopped onions and green chili, cook until they turn golden brown.
  3. Add chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft.
  4. Crack the eggs into the pan and scramble them with the cooked mixture until they're fully cooked. Keep the heat on medium-low to prevent eggs from getting browned.
  5. Remove from heat, garnish with fresh chopped coriander leaves and serve hot with buttered toast or Indian bread(chapati).
