Indian Spiced Scrambled Eggs (Anda Bhurji)

Ingredients:

  • 6 whole Eggs
  • 2 whole Medium size onions
  • 2 whole Tomatoes
  • 2 whole Green chillies
  • 1 bunch chopped Fresh coriander leaves
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • to taste Salt
  • 2 tablespoons Oil

Instructions:

  1. Heat the oil in a large pan over medium heat.
  2. Finely chop the onions, tomatoes and green chillies and add them to the pan. Cook until the onions become translucent.
  3. In a bowl, beat the eggs with a pinch of salt and set aside.
  4. Add turmeric powder and red chilli powder to the pan and stir well.
  5. Pour the beaten eggs into the pan and stir continuously to scramble the eggs with the spices and vegetables.
  6. Once the eggs are fully cooked, add chopped coriander leaves and mix well. Remove from heat.
  7. Serve hot with roti or bread.
