
Indian Spiced Scrambled Eggs (Anda Bhurji)

Ingredients:
- 6 whole Eggs
- 2 whole Medium size onions
- 2 whole Tomatoes
- 2 whole Green chillies
- 1 bunch chopped Fresh coriander leaves
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Red chilli powder
- to taste Salt
- 2 tablespoons Oil
Instructions:
- Heat the oil in a large pan over medium heat.
- Finely chop the onions, tomatoes and green chillies and add them to the pan. Cook until the onions become translucent.
- In a bowl, beat the eggs with a pinch of salt and set aside.
- Add turmeric powder and red chilli powder to the pan and stir well.
- Pour the beaten eggs into the pan and stir continuously to scramble the eggs with the spices and vegetables.
- Once the eggs are fully cooked, add chopped coriander leaves and mix well. Remove from heat.
- Serve hot with roti or bread.
