
Indian Spiced Pork Curry

Ingredients:
- 1.5 pounds Boneless pork shoulder
- 1 whole Onion, finely chopped
- 2 cloves Garlic cloves, minced
- 1 inch Fresh ginger, finely chopped
- 1 tbsp Garam masala
- 1.5 tsp Turmeric powder
- 1 tsp Cayenne pepper
- 1 cup Fresh tomatoes, pureed
- 1/2 cup Yogurt
- to taste Salt
- a handful Fresh coriander leaves for garnish
- 2 tbsp Vegetable oil
Instructions:
- Heat oil in a large pan over medium heat.
- Add the onions, ginger, and garlic. Sauté until onions become golden brown.
- Add the garam masala, turmeric, and cayenne pepper. Sauté for a minute until the spices are fragrant.
- Add the pork pieces into the pan, sprinkle salt according to taste, and cook until they are browned on all sides.
- Pour in the tomato puree, stirring to coat the pork with the spices and tomato.
- Cover the pan, lower the heat to medium-low, and let it simmer for about 45 minutes, or until the pork is tender.
- Stir in the yogurt until well combined, and simmer for an additional 5-10 minutes.
- Garnish with fresh coriander leaves. Serve hot with rice or Indian bread such as naan or roti.
