Indian Spiced Pork Curry

Ingredients:

  • 1.5 pounds Boneless pork shoulder
  • 1 whole Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 inch Fresh ginger, finely chopped
  • 1 tbsp Garam masala
  • 1.5 tsp Turmeric powder
  • 1 tsp Cayenne pepper
  • 1 cup Fresh tomatoes, pureed
  • 1/2 cup Yogurt
  • to taste Salt
  • a handful Fresh coriander leaves for garnish
  • 2 tbsp Vegetable oil

Instructions:

  1. Heat oil in a large pan over medium heat.
  2. Add the onions, ginger, and garlic. Sauté until onions become golden brown.
  3. Add the garam masala, turmeric, and cayenne pepper. Sauté for a minute until the spices are fragrant.
  4. Add the pork pieces into the pan, sprinkle salt according to taste, and cook until they are browned on all sides.
  5. Pour in the tomato puree, stirring to coat the pork with the spices and tomato.
  6. Cover the pan, lower the heat to medium-low, and let it simmer for about 45 minutes, or until the pork is tender.
  7. Stir in the yogurt until well combined, and simmer for an additional 5-10 minutes.
  8. Garnish with fresh coriander leaves. Serve hot with rice or Indian bread such as naan or roti.
