Indian Spiced Pasta

Ingredients:

  • 500 grams Pasta (fusilli or penne)
  • 2 tablespoon Olive oil
  • 1 large Onion
  • 2 large Garlic cloves
  • 1 Green chili
  • 2 cups Freshly chopped tomatoes
  • 1 teaspoon Garam masala
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 cup Cooking cream
  • handful Fresh coriander leaves
  • to taste Salt

Instructions:

  1. On high heat, boil water in a large pot. Add enough salt and pasta, cook until it is al dente. Drain the pasta and rinse with cold water, keep it aside.
  2. Heat olive oil in a pan. Add finely chopped onions, garlic, and green chili. Sauté until onion becomes translucent.
  3. Add chopped tomatoes into the pan and cook until it becomes mushy.
  4. Add garam masala, turmeric, and red chili powder. Mix well and cook for a few minutes until the spices are well combined.
  5. Add the cooking cream and mix well. Cook for another 2-3 minutes on low heat.
  6. Add the cooked pasta into the pan and mix well, ensuring the pasta is fully coated with the spices and cream.
  7. Garnish with fresh coriander leaves and serve hot.
