Indian Spiced Egg Bhurji (Scrambled Eggs)

Ingredients:

  • 6 Large eggs
  • 1 large Onion
  • 2 medium Tomatoes
  • 2 Green chili
  • 2 Garlic cloves
  • 1 inch piece Ginger
  • 0.5 Teaspoon Turmeric
  • 0.5 Teaspoon Red chili powder
  • 0.5 Teaspoon Cumin seeds
  • 2 Tablespoons Vegetable oil
  • A handful Fresh coriander leaves
  • To Taste Salt

Instructions:

  1. Heat oil in a pan and add cumin seeds. Once they start to splutter, add finely chopped onions and green chilies.
  2. Sauté until onions turn golden brown and then add minced garlic and ginger. Cook until the raw smell of garlic goes away.
  3. Add finely chopped tomatoes and cook until they turn mushy. Then add turmeric and chili powder and mix well.
  4. Whisk eggs in a bowl and pour them into the pan. Cook on medium heat while constantly stirring. This will scramble the eggs and mix them with the onion-tomato mixture.
  5. Add salt to taste and cook until eggs are fully cooked. Garnish with finely chopped coriander leaves.
  6. Your Egg Bhurji is ready! Serve hot with Indian bread or toast.
