
Indian Spiced Egg Bhurji (Scrambled Eggs)

Ingredients:
- 6 Large eggs
- 1 large Onion
- 2 medium Tomatoes
- 2 Green chili
- 2 Garlic cloves
- 1 inch piece Ginger
- 0.5 Teaspoon Turmeric
- 0.5 Teaspoon Red chili powder
- 0.5 Teaspoon Cumin seeds
- 2 Tablespoons Vegetable oil
- A handful Fresh coriander leaves
- To Taste Salt
Instructions:
- Heat oil in a pan and add cumin seeds. Once they start to splutter, add finely chopped onions and green chilies.
- Sauté until onions turn golden brown and then add minced garlic and ginger. Cook until the raw smell of garlic goes away.
- Add finely chopped tomatoes and cook until they turn mushy. Then add turmeric and chili powder and mix well.
- Whisk eggs in a bowl and pour them into the pan. Cook on medium heat while constantly stirring. This will scramble the eggs and mix them with the onion-tomato mixture.
- Add salt to taste and cook until eggs are fully cooked. Garnish with finely chopped coriander leaves.
- Your Egg Bhurji is ready! Serve hot with Indian bread or toast.
