
Indian Spiced Chicken Breakfast Bowl

Ingredients:
- 2 pieces Chicken breast
- 2 teaspoon Garam masala
- 1 teaspoon Turmeric powder
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 2 tablespoon Coconut oil
- 1 cup Quinoa
- 2 cup Water for the quinoa
- 2 pieces Eggs
- 1 handful Chopped fresh cilantro
Instructions:
- In a small bowl, mix together the garam masala, turmeric, cumin, coriander, salt, and black pepper.
- Rub the chicken breasts with the spice mixture, making sure they are fully coated.
- Heat the coconut oil in a large skillet over medium heat. Add the chicken and cook for about 7-8 minutes on each side, or until they are fully cooked.
- While the chicken is cooking, prepare the quinoa as per the packet's instructions.
- Once everything is ready, slice the cooked chicken and distribute it over two bowls filled with the cooked quinoa.
- In the same skillet, quickly fry the eggs to your preferred level of doneness. Place one egg on top of each bowl.
- Top off each bowl with a generous handful of chopped fresh cilantro before serving.
