Indian Spiced Chicken Breakfast Bowl

Ingredients:

  • 2 pieces Chicken breast
  • 2 teaspoon Garam masala
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Coconut oil
  • 1 cup Quinoa
  • 2 cup Water for the quinoa
  • 2 pieces Eggs
  • 1 handful Chopped fresh cilantro

Instructions:

  1. In a small bowl, mix together the garam masala, turmeric, cumin, coriander, salt, and black pepper.
  2. Rub the chicken breasts with the spice mixture, making sure they are fully coated.
  3. Heat the coconut oil in a large skillet over medium heat. Add the chicken and cook for about 7-8 minutes on each side, or until they are fully cooked.
  4. While the chicken is cooking, prepare the quinoa as per the packet's instructions.
  5. Once everything is ready, slice the cooked chicken and distribute it over two bowls filled with the cooked quinoa.
  6. In the same skillet, quickly fry the eggs to your preferred level of doneness. Place one egg on top of each bowl.
  7. Top off each bowl with a generous handful of chopped fresh cilantro before serving.
